Xavier (“X”) Mariezcurrena, aka Mr. FOH hospitality, and Chef Tony Aiazzi are restaurant dudes and longtime compatriots. As is usually the case with restaurant work, at the end of service they would discuss the current “status quo,” of operations (complain) and brainstorm what they could do to make a positive impact for their industry. They identified the same pain surfacing over and over again: office busywork. What’s in a name?
